In our last post, we told you all about the amazing home cooking we got to stuff ourselves with this weekend. And now, we bring you a recipe from the brains behind the operation, my mother. Caramelized French Toast is a staple at our holiday brunches. Christmas morning, Easter, Saturday. You name it. I love this stuff. And I would recommend it to anyone. Here’s the recipe:
1 stick butter
1 C. brown sugar, packed
1/2 C. maple syrup
16 slices bread
6 oz. soft cream cheese
Cinnamon/sugar mix (3T. sugar + 3 tsp. cinnamon)
1 2/3 C. milk
1 tsp. vanilla
Spray an 11×17 pan with Pam and set aside. In small pan, combine brown sugar, butter and syrup. Cook until dissolved and bubbly (approx. 5 min). Pour into 11×17 pan. Spread 8 slices of bread with cream cheese. Place bread, cheese side up, in the pan over the syrup mixture. Sprinkle with cinnamon/sugar mix over all. Place the other 8 slices of bread on top of the cream cheese pieces to make sandwich. Beat egg, milk and vanilla with whisk and pour over sandwiches. Cover and let set at least 2 hours or overnight in the refrigerator. Uncover and bake at 350° for 40 minutes or until golden brown. Cut into triangles and serve immediately. Flip over when removing from pan and place on plate.
